Asian Cilantro Imitation Crab Salad

Sometimes, we just want a simple quick salad to satisfy that seafood craving. I know, I know…Imitation crab sticks aren’t real. I have been shamed enough. You know what? Who cares? Just enjoy them in this three step easy recipe.

🍋TOOLS:

  • 2 medium bowls (one for mixing and one for serving)

  • Zester

  • Mini Blender

🍋INGREDIENTS:

  • Imitation Crab: 2 packets (12 pieces in total)

  • Pomegranate: a handful de-seeded for decoration

  • Light Mayonnaise: 2 tbsp

  • Lemon Juice: 1 1/2 tsp

  • Lemon Zest: Half a lemon

  • Rice Vinegar: 1 tsp

  • Sesame Oil: 1 tsp

  • Cilantro: a handful de-stemmed (or as much as you like)

  • Salt and pepper to taste

🍋METHOD:

  • In a small blender, blend the mayo, lemon juice, zest, rice vinegar, both oils, and cilantro. Blend until well incorporated then set aside.

  • Shred each imitation crab stick then place it all in the mixing bowl. Pour the dressing on top then season with salt and pepper to taste.

  • Place in a serving bowl, decorate with pomegranate and enjoy!
