Asian Cilantro Imitation Crab Salad
Sometimes, we just want a simple quick salad to satisfy that seafood craving. I know, I know…Imitation crab sticks aren’t real. I have been shamed enough. You know what? Who cares? Just enjoy them in this three step easy recipe.
🍋TOOLS:
2 medium bowls (one for mixing and one for serving)
Zester
Mini Blender
🍋INGREDIENTS:
Imitation Crab: 2 packets (12 pieces in total)
Pomegranate: a handful de-seeded for decoration
Light Mayonnaise: 2 tbsp
Lemon Juice: 1 1/2 tsp
Lemon Zest: Half a lemon
Rice Vinegar: 1 tsp
Sesame Oil: 1 tsp
Cilantro: a handful de-stemmed (or as much as you like)
Salt and pepper to taste
🍋METHOD:
In a small blender, blend the mayo, lemon juice, zest, rice vinegar, both oils, and cilantro. Blend until well incorporated then set aside.
Shred each imitation crab stick then place it all in the mixing bowl. Pour the dressing on top then season with salt and pepper to taste.
Place in a serving bowl, decorate with pomegranate and enjoy!
